Breakfast toast

It was the first time my kind-hearted boss shook his head in disappointment at me in front of everyone. The embarrassment and shame when he said I had forgotten where I came from. I felt all eyes on me, in disbelief, as if I had done something so terrible. I just hoped that they didn't think my parents failed to raise me right. As blood rushed to turn my face red, I wanted to close my eyes and magically disappear from the attention.

So what 'crime' did I commit? Well, one early morning, I groggily responded with a confused "huh?" when asked about how my Mid-Autumn Festival was spent earlier this week. ;) I had forgotten all about it despite seeing all my foodie friends eating/baking mooncakes since last week. Actually, maybe I didn't completely forget but it's just my brain does not function at its normal capacity on days when I do not have breakfast - which was the case for that fateful day.


So I've learnt my lesson and the next morning, I made sure I woke up early for a hearty meal before leaving the house. 

Creamy avocado egg salad. For some fat and protein.

And juicy tomatoes and goat cheese. Anti-oxidant and calcium. (You do know I'm no nutritionist right?)

On toasted spelt sourdough. Carbs for brain function?

Yes please!


Just brush each slice of bread with some olive oil then rub with the cut side of halved garlic. For the tomato toast, crumble a bit of goat cheese evenly on the bread.

Grill them in the oven at around 230C (450F) for a few minutes (until cheese melts).


Mash 2 hard boiled eggs with one large avocado

Don't forget a dollop of mayo and whole-grain mustard seeds, and some sprinkling of S&P.

(edit) Oh and a squeeze of half a lemon (or vinegar) too.


Slice up some juicy tomatoes and layer them on on the goat cheese.

Spread generously the avocado egg salad onto the other slice!

Avo egg salad? That's a twist on egg salad that I need to try! This would be great for lunch too (even late night snack, whops!). Thanks for the idea~

I really, really want this, but I've no bread on hand, or avocado either. Me thinks I need to do some grocery shopping! I love toasted tomatoes and cheese and eggs and avocado. Yes, hopping in the car and on the way to the market now!

I learnt about mid-autumn fest corresponds to Korean thanksgiving too, this year. It's a new experience for me.
I miss havin toast for breakie, especially when don simply like yours. It's kimchi all day everyday here...

my mum tried your version of carrot cake.. so far def. the best. i love the crumbly texture.. my bf doesnt tho.. arh ate 2 carrot cakes in less than one week nooooo/

I love the story, Viv. Avo-egg salad is one of my favorites as well. In fact, it was breakfast this morning =) Yours is much more elaborate than mine - goat cheese sounds perfect. Will have to try that soon! Happy weekend.

I love the idea of the avo-egg with the spelt sourdough :) too bad, avocados are a tad ex here and i can't get spelt sourdough easily :( So did you spend a belated mid-autumn festival in the end? ;p

Oh shoot, I just used avocado last night. I'm going to make this avocado egg salad. This looks so good.... I'm going to use Japanese mayonnaise to make this. I already know this is going to be my new addicting lunch idea. I really shouldn't have eaten that avocado!!! Try it soon...can't wait!

I think avocados just go so well with eggs! The creamy texture of it kind of reminds me of the egg yolk, you can even fool yourself into thinking you've got twice the amount of eggs. Or maybe it's just me. I liek to scramble eggs, nand then fold in mashed avocado. My friend calls it vomit ):

Hi Viv,
You are right with your comments about my recent bread post. For this bake, I've kneaded and rested the dough using my bread machine and then I shaped them as accordingly. The Italian OO flour has a ranging gluten content ranging from 6-12% and the reason for me to choose to have this 1:4 ratio is because the overall flour will have 25% softness of the OO flour and at the same time having enough gluten to rise for a perfect bread texture. AP flour has a slightly lower gluten content than bread flour and thus less "tougher" than bread flour and I'm guessing that it might achieve the same effect as Italian OO. In regardless, I still like to use the Italian OO for my baking. I reckon that it works well for me most of the time :D
